Labbits Like: Chewy Orange & Spice Cookies

With less than two weeks to go until Christmas, it's time Year of the Labbit shared some Christmas-y cookie recipes! Today's cookie recipe is a crisp-on-the-outside, chewy-on-the-inside cookie with citrus and spice. It's a quick and easy cookie recipe that's fun to bake, and it comes courtesy of Pipkin's friend Renuka. Quite a number of Pipkin's friends tried these cookies and they were a hit! One friend described it as a tangy, spicy, snickerdoodle. Pip looked up a snickerdoodle recipe and yup, that's pretty much what this is!

As always, adjust the spices and sugar levels to your taste. Pipkin particularly likes citrus, ginger and cinnamon, so he's going to add more of those spices than what the recipe calls for.  If you like a less soft cookie (or you're watching your labbity figure) cut down on the butter. Chewy Orange & Spice Cookies
Ingredients:
2 3/4 cup flour
1/2 tsp baking powder
1/2 tsp salt
1 3/4 cup sugar
2 1/2 tsp cinnamon
1 tsp ground cardamom
1 tsp ground ginger
1/2 tsp all spice
1/2 tsp ground black pepper 
1 cup butter, softened
zest of 1 orange
1 egg
1/2 tsp vanilla extract

Preparation:
Preheat oven to 350°F.
In a large bowl, sift together the flour, baking powder and salt.
In a separate bowl, mix sugar and dry spices. Set aside about 1/4 of the mixture in a bowl or shallow plate for rolling the cookie dough.








Cream butter into larger portion of sugar and spice mix. Add egg, orange zest and vanilla extract. Add to flour mixture and mix together to form a moist ball of dough.


This is the fun part! Pipkin's tempted to toss himself in sugar & spice.








Spoon about 2 tsps of cookie dough into your paws and roll into a ball. Toss into reserved sugar and spice mixture, coating all sides. Lightly press onto a baking sheet lined with parchment paper. Space cookies at least an inch apart.

Bake in oven at 350°F for 8 - 12 minutes, depending on desired amount of softness (less baking time for super soft cookies, more time for crisp on the outside/soft on the inside cookies).
Allow to cool slightly before removing from baking sheet.

Yields: about 4 dozen 2" cookies, enough for many labbits, and their kitty cat friends!
